Deviled Eggs with chicken

The egg, being a powerhouse of vitamins and minerals, high-quality protein and disease-fighting nutrients like carotenoids and choline, is a favourite for many of us. So easy and to cook and so good to eat! It is a versatile ingredient that can be used in umpteen number of ways.

But I have always felt that the yolk of the egg is quite bland, particularly in a full boiled egg. Why not make it flavourful and even healthier? I’m not a great fan of deviled eggs with all its mayo, cheese and mustard. As you might know by now, I always go for the healthier option. So I decided to make my own version of ‘deviled eggs’, by hiding chicken inside the egg!

You will need:

Eggs – 5

minced chicken – 500 gms

onions – 2

tomato – 1

ginger – a small piece minced

garlic – 2 cloves minced

yoghurt – 5 tsp

mint leaves – 1/2 cup finely cut into strips

chilli powder – 1 tsp

salt and pepper

oil – 2 tsp

Hard boil the eggs, shell them and cut into halves lengthwise. Scoop out the yolk carefully, mash with a fork and keep aside. Heat the oil in a pan and saute the onions for 5 min until it turns translucent, then add ginger and garlic. After 5 min, add tomatoes and salt. Once the tomatoes turn mushy, add chilli powder, minced chicken and yoghurt. Mix well and keep it closed for 10 min or until the chicken is cooked and the gravy turns thick. Turn off the heat, add the mashed yolks and half of the mint leaves and mix well.

Place the egg whites with the cut side up on a serving platter. Spoon the chicken mixture into each egg white and garnish with the remaining mint leaves. Apart from the taste and wholesome goodness of these chicken-stuffed eggs, there is another reason for me to love this recipe. I can use the left-over filling for my sandwiches/ wraps which taste great!

Variation:

Chicken can be replaced with minced shrimps or vegetables of your choice (minced carrots, beans, cauliflower, peas, potatoes).

But it really gives you a kick when you stuff chicken inside an egg!
